Luchi

Ingredients:

  • 2 cups all-purpose flour
  • 2 tablespoons ghee
  • 1 teaspoon salt
  • Water, as needed

Instructions:

  1. In a large bowl, combine the flour, ghee, and salt. Mix well.
  2. Gradually add water and knead into a soft dough. Cover the dough and let it rest for 30 minutes.
  3. Divide the dough into small balls. Roll out each ball into a thin circle.
  4. Heat oil or ghee in a deep frying pan over medium heat.
  5. Carefully slide a luchi into the hot oil. Fry for a few seconds on each side until golden brown and puffed up.
  6. Remove from the pan and drain on a paper towel.
  7. Serve hot with your favorite curry or chutney.

Tips:

  • The dough should be soft and pliable, but not too sticky.
  • If the dough is too dry, add a little more water.
  • If the dough is too wet, add a little more flour.
  • Make sure the oil is hot enough before frying the luchis.
  • Do not overcrowd the pan when frying the luchis.
  • Serve the luchis hot and enjoy!
