Aloo Paratha with ghee

Ingredients:

  • 2 cups whole wheat flour
  • 1 teaspoon salt
  • 2 tablespoons ghee, melted
  • 1/2 cup water, or more as needed
  • 3-4 medium potatoes, boiled and mashed
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1/4 teaspoon red chili powder
  • 1/4 teaspoon chaat masala
  • 1/4 cup chopped cilantro
  • Salt to taste

Instructions:

  1. In a large bowl, combine the flour, salt, and ghee. Mix well.
  2. Add the water and knead into a soft dough. Cover the dough and let it rest for 30 minutes.
  3. Meanwhile, make the potato stuffing. In a medium bowl, combine the mashed potatoes, ginger-garlic paste, coriander powder, garam masala, red chili powder, chaat masala, cilantro, and salt. Mix well.
  4. Divide the dough into 8 equal balls. Roll out each ball into a thin circle.
  5. Place a spoonful of the potato stuffing in the center of each circle. Fold the circle in half and seal the edges.
  6. Roll out the stuffed circles into thin parathas.
  7. Heat a griddle or tawa over medium heat. Cook the parathas on both sides until golden brown and cooked through.
  8. Serve hot with ghee or butter, yogurt, pickle, or chutney.

Tips:

  • To make the dough easier to knead, add a little more water as needed.
  • The potato stuffing should be well-seasoned, but not too spicy.
  • When rolling out the parathas, be careful not to tear the dough.
  • If the parathas are sticking to the griddle, add a little oil or ghee to the pan.
  • Serve the parathas hot and enjoy!
