Aloo Paratha with ghee
Ingredients:
- 2 cups whole wheat flour
- 1 teaspoon salt
- 2 tablespoons ghee, melted
- 1/2 cup water, or more as needed
- 3-4 medium potatoes, boiled and mashed
- 1 tablespoon ginger-garlic paste
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- 1/4 teaspoon red chili powder
- 1/4 teaspoon chaat masala
- 1/4 cup chopped cilantro
- Salt to taste
Instructions:
- In a large bowl, combine the flour, salt, and ghee. Mix well.
- Add the water and knead into a soft dough. Cover the dough and let it rest for 30 minutes.
- Meanwhile, make the potato stuffing. In a medium bowl, combine the mashed potatoes, ginger-garlic paste, coriander powder, garam masala, red chili powder, chaat masala, cilantro, and salt. Mix well.
- Divide the dough into 8 equal balls. Roll out each ball into a thin circle.
- Place a spoonful of the potato stuffing in the center of each circle. Fold the circle in half and seal the edges.
- Roll out the stuffed circles into thin parathas.
- Heat a griddle or tawa over medium heat. Cook the parathas on both sides until golden brown and cooked through.
- Serve hot with ghee or butter, yogurt, pickle, or chutney.
Tips:
- To make the dough easier to knead, add a little more water as needed.
- The potato stuffing should be well-seasoned, but not too spicy.
- When rolling out the parathas, be careful not to tear the dough.
- If the parathas are sticking to the griddle, add a little oil or ghee to the pan.
- Serve the parathas hot and enjoy!
